Ingredients
- ¼ cup hazelnuts, chopped
- ¼ cup pecans, chopped
- ¼ cup pumpkin seeds, chopped
- ¼ cup sliced almonds
- Just under 1/8 cup coconut oil, melted
- 1/8 cup xylitol
- 1 teaspoon cinnamon
- Pinch of Himalayan salt
- ¼ cup goji berries
Instructions
- Prepare the mixture:
- Preheat the oven to 150°C (300°F).
- In a bowl, mix the hazelnuts, pumpkin seeds, almonds, coconut oil, xylitol, cinnamon, and salt until evenly coated.
- Bake:
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake in the oven for 20 minutes.
- Add pecans:
- Add the chopped pecans to the mixture during the last 5 minutes of baking.
- Cool and finish:
- Remove from the oven and let the granola cool completely.
- Stir in the goji berries once cooled.
- Store:
- Transfer the granola to an airtight container to keep it crispy and fresh.
Tip:
For extra flavor and texture, you can add unsweetened coconut flakes or cacao nibs.
