Ingredients
Portobello Mushrooms:
- 2 large portobello mushrooms, cut into 3 or 4 pieces
- 2 tsp jerk seasoning (see recipe for “Jamaican Jerk Seasoning Blend” below)
- 2 tsp melted coconut oil
- 1 garlic clove, grated
- 1 thumb-sized piece of ginger, grated
- 2 tbsp tamari
- 2 tsp lime juice
Cauliflower Rice:
- 1 cauliflower, coarsely grated
- 2 tbsp olive oil
- 1 onion, finely chopped
- Leaves from 2 thyme sprigs
- 1 clove
- ¼ tsp Himalayan salt
- 1 tbsp lime juice
Mango Salsa:
- 1 ripe mango, diced
- 1 tsp fresh cilantro, finely chopped
- 2 tbsp finely chopped red onion
- 2 tbsp lime juice
- A pinch of Himalayan salt
Instructions
Portobello Mushrooms:
- Prepare the marinade:
- Combine all the marinade ingredients (except the mushrooms) in a bowl.
- Marinate:
- Place the mushroom pieces in the marinade, ensuring they are well coated. Marinate for 1 hour.
- Cook:
- If using a dehydrator: Dry the mushrooms at 46ºC for 3 hours.
- If using an oven: Preheat to 200°C and bake the mushrooms for 15-20 minutes, turning halfway through.
Cauliflower Rice:
- Prepare the rice:
- Grate the cauliflower into a rice-like texture using a box grater or food processor.
- Cook:
- Heat olive oil in a skillet over medium heat.
- Sauté the onion until soft, then add the thyme leaves and clove.
- Stir in the grated cauliflower and cook for 5-7 minutes.
- Season with salt and lime juice.
Mango Salsa:
- Combine ingredients:
- Mix the diced mango, cilantro, red onion, lime juice, and a pinch of salt in a bowl.
Jamaican Jerk Seasoning Blend
Makes: ½ cup
Prep Time: 5 minutes
Ingredients:
- 1 tbsp garlic powder
- ¼ tsp cayenne pepper
- 2 tsp dried thyme
- 2 tsp dried parsley
- 2 tsp agave syrup
- 2 tsp Himalayan salt
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp ground nutmeg
- ¼ tsp cinnamon
Instructions:
- Mix all ingredients together and store in an airtight container for up to 3 months.
Assembly:
- Serve the baked or dehydrated portobello mushrooms alongside the cauliflower rice and mango salsa.
- Garnish with additional cilantro or lime wedges if desired.
