Part 1: Marinated Tofu
Ingredients:
- 400 g tofu, cut into 2 cm cubes
- 2 tbsp toasted sesame oil
- 1 tbsp soy sauce
- 1 tbsp agave syrup
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- 15 g fresh ginger, grated
- 1 garlic clove, grated
Instructions:
- In a bowl, mix the sesame oil, soy sauce, agave syrup, cumin, coriander, and turmeric.
- Grate the ginger and garlic directly into the bowl.
- Add the tofu cubes and toss to coat them evenly in the marinade.
- Let the tofu marinate for at least 30 minutes (or longer for more flavor).
Part 2: Cucumber Salad
Ingredients:
- 200 g cucumber, thinly sliced
- 8 radishes, thinly sliced
- 1 shallot, finely chopped
- 2 tbsp rice vinegar
- Zest and juice of ½ lime
- ½ red chili, finely chopped
- 1 tbsp toasted sesame oil
- 2 tbsp sesame seeds
- 1 tbsp soy sauce
- Himalayan salt and black pepper, to taste
Instructions:
- Combine the cucumber, radishes, and shallot in a large bowl.
- Add the rice vinegar, lime zest, lime juice, chili, sesame oil, soy sauce, and sesame seeds.
- Toss the salad to combine, season with salt and pepper, and let it rest until serving.
Part 3: Peanut Sauce
Ingredients:
- 5 tbsp creamy peanut butter
- 5 tbsp coconut milk
- 1 tbsp soy sauce
- 1 tbsp agave syrup
- 1 tbsp lime juice
- Chili flakes, to taste
Instructions:
- In a bowl, whisk together the peanut butter, coconut milk, soy sauce, agave syrup, and lime juice until smooth.
- Add chili flakes to taste.
Part 4: Tofu Satay Skewers
Ingredients:
Instructions:
- Thread the marinated tofu cubes onto skewers.
- Heat a grill pan or frying pan with a little olive oil.
- Cook the tofu skewers until golden brown on all sides.
Part 5: Serving
Ingredients:
- Fresh cilantro, chopped
- Extra sesame seeds
Instructions:
- Serve the tofu skewers with the peanut sauce and cucumber-radish salad.
- Garnish with chopped cilantro and extra sesame seeds.
Tip:
For a complete meal, pair the tofu satay with steamed jasmine rice or noodles.
