Mix the chia seeds with warm water in a small bowl and let it sit for 10 minutes to thicken.
Preheat the oven to 180°C (350°F).
In a large bowl, mix the almond flour, baking powder, and salt.
Add the maple syrup, melted coconut oil, and lemon zest to the chia seed mixture and stir well.
Combine the chia mixture with the dry ingredients in the large bowl and mix until a dough forms.
Place the dough on a baking sheet lined with parchment paper. Place another sheet of parchment paper on top and press the dough down until it’s about 2 cm thick.
Bake the scones for 15 minutes in the preheated oven. Remove from the oven and let them cool slightly.
Cut the scones into pieces and bake them for another 10 minutes until golden brown and crispy.
