Ingredients
- 500 g firm tofu (well-drained to remove all water)
- Vegan ketchup
- BBQ seasoning
- 0.5 cup cooked quinoa
Instructions
- Preheat the oven to 200°C (392°F).
- Line a baking tray with parchment paper.
- Cut the tofu into small “nugget” shapes.
- Mix the ketchup with BBQ seasoning to make a BBQ sauce. Coat the tofu nuggets in the BBQ sauce, then cover them with the cooked quinoa.
- Place the nuggets on the baking tray and bake for 15-20 minutes, until the quinoa is golden brown and crispy.
- Serve with extra sauce, if desired.
Tip: To properly drain the tofu, press it with something heavy like a pot filled with water or a few books. Place the tofu in a container, cover it with a kitchen towel or foil, and put the weight on top. Let it sit for 15 to 30 minutes, then drain off the excess water.
