Ingredients
- Zucchini (thinly sliced)
- Tomato (thinly sliced)
Marinara Sauce
- 1 garlic clove
- 1 cup sun-dried tomatoes (soaked and soft)
- 0.25 cup olive oil
- Juice of half a lemon
- Oregano (to taste)
Cashew Cheese
- 1 cup soaked cashews (soaked for at least 6 hours in water)
- 1 garlic clove
- 1 teaspoon lemon juice
Walnut Crumble
- 2 cups soaked walnuts
- 1 teaspoon dried sage
- 1 teaspoon fresh thyme
- 1 teaspoon dried basil
- 1 teaspoon rosemary
- 2 teaspoons tamari
- Pepper (to taste)
Instructions
Marinara Sauce:
Blend all the ingredients together until smooth.
Cashew Cheese:
Blend all the ingredients until the texture resembles cottage cheese.
Walnut Crumble:
Blend the ingredients briefly until you achieve a crumbly texture.
Assembling the Lasagna:
1. Start with a slice of zucchini.
2. Spread a layer of marinara sauce on top and add three small dollops of cashew cheese.
3. Place a thin slice of tomato on top and sprinkle with some walnut crumble.
4. Repeat these layers and finish with a baby spinach leaf on top.
