For the spice mix
2 tbsp nutritional yeast
1 tsp chili powder
1 tsp ground cumin
1 tsp black or regular salt
3/4 tsp turmeric
1/4 tsp garlic powder

for the tofu-scramble
1 tbsp olive oil
200 g mushrooms (sliced)
1 red pepper (finely chopped)
1/2 onion (finely chopped)
2 cloves of garlic (finely chopped)
350 gram tofu
1 can (0.5kg) of black beans, drained and rinsed

Preparation method

Put all the herbs of the herb mix in a bowl and mix them.
Heat a large frying pan on medium heat and add the olive oil. Add the mushrooms, pepper, onion and garlic and simmer for about 8 minutes until everything just starts to brown.
Add the tofu and crush with your spoon until you get a nice scramble texture. Stir in the spice mix and black beans. Leave to heat for 5 – 8 minutes.
