Ingredients
1 diced onion
500 grams root in cubes
1 teaspoon cumin
1 tomato in pieces
2 diced garlic cloves
1 tablespoon MCT oil / coconut oil / olive oil
vegetable stock
salt and pepper
Parsley or coriander as a garnish
Preparation method
Heat the oil in a pan. Stew the onion and garlic. After 5 minutes add the carrot and tomato. Add the cumin and stir fry for a few minutes. Add the liter of vegetable stock. Bring to the boil and cook for about 15 minutes until the carrot is well done. Finely puree the soup with the hand blender. Finish with parsley or coriander.
